4 potatoes (peeled, grated)
1 onion (grated)
2 Tbs plain flour
2 eggs
salt and pepper
vegetable oil (for frying)
Squeeze any excess liquid from the grated potatoes and place in a bowl with the onion, flour and egg. Mix together well and season with salt and pepper. Heat enough oil in the base of a frying pan to shallow fry. Form the mixture into patties and
fry until golden brown on both sides. Serve with salt and tomato sauce or choice of condiments.
