Chocolate Coconut Self-Saucing Pudding


1 cup plain flour 
2 tsp baking powder 
2 Tbs cocoa powder, plus 2 Tbs extra
1/4 cup desiccated coconut
1/4 cup caster sugar 
40g unsalted butter, melted 
1/2 cup milk
1 egg 
vanilla
1 cup brown sugar, firmly packed 

Preheat the oven to 175°C. Sift the flour, baking powder, cocoa and a pinch of salt into a large bowl, then stir in the coconut and caster sugar. In a separate bowl, combine the melted butter, milk, egg and vanilla with a wooden spoon, then mix with the dry ingredients. Pour the mixture into a greased ceramic pudding dish. Sprinkle the extra cocoa and brown sugar over the pudding, then carefully pour 1 cup boiling water over the top. Bake in the oven until the centre has puffed and the pudding feels firm – this should take about 40-45 mins.
